Sue Frey's Corn Casserole


2 cans whole kernel corn, drained
2 cans cream style corn
2/3 can sweetened condensed milk
     (The recipe calls for the full can, but I think that makes the casserole too sweet.)

Mix and spread into greased cake pan.

Crush Ritz crackers on top. I crush one sleeve of crackers. Use more or less, depending on your taste.
Drizzle one stick melted butter on top.

Bake at 350 degrees for one hour.

Broccoli Casserole

 

1 cup rice, uncooked

1 20-oz. pkg. frozen broccoli

1 large jar Cheese Whiz

2 cans cream of chicken soup

1 can water

Put in 9 by 13-inch greased pan.  Bake for 1 hour at 350 degrees.  Let set till firm.  This is excellent, also, if you add leftover chicken or turkey.

Chili Topped Potatoes

 

Combine:

1 15-oz can chili with beans

3/4 tsp. chili powder

1 T. instant minced onion

 

Heat through.  Spoon into split-open baked potatoes.  Top with grated cheddar cheese.  Um-good!!!

French Fries

 

Slice potatoes and soak in ice water.  Dry on paper towel.  Put on cookie sheet with 2 T. oil and salt.  Bake 30 to 40 minutes at 350 to 400 degrees.

Easy Scalloped Potatoes

 

1 can cream of celery soup

1 3-oz pkg. cream cheese

2/3 cup milk

4 cups frozen hash browns

3/4 cup diced onions

grated cheddar cheese

 

Heat soup, cream cheese and milk in saucepan, stirring constantly.  Place potatoes and onions in a 9 by 13-inch pan.  Pour liquid over top.  Mix and cover.  Bake at 350 degrees for 1 hour.  Uncover.  Sprinkle cheese over top and return to oven until cheese has melted.

Spanish Rice

 

1 medium green pepper, chopped

1 medium onion, chopped

2 or 3 T. butter

3 to 4 cups Minute Rice

115-oz. can tomato sauce

3/4 to 1 can water

 

Sauté peppers, onion and rice in butter.  Add sauce and water.  Bring to boil, then turn flame to low, stirring often.  Simmer for 15 minutes.

Baked Mashed Potato Casserole

 

8 to 10 large potatoes, cooked and mashed

1 package (8-oz) cream cheese

1 cup sour cream with chives

garlic salt

paprika

butter

 

Combine above ingredients, except paprika and butter.  Beat till fluffy.  Place in a greased casserole and top with butter and paprika.  Bake at 350 degrees till brown.  Serves 10 to 12.

Joe’s Favorite Green Bean Casserole

 

Mix together:

2 cans green beans, drained

1 can cream of mushroom soup

Velveeta cheese

 

Pour into greased casserole dish.  Top with:

1 can onion rings

 

Bake at 350 degrees for 30-40 minutes.

Delicious Broccoli Casserole

 

1 package frozen broccoli

1 can cream of mushroom soup

2 cups grated sharp cheese

1 cup extra sharp cheese

1 roll Ritz crackers (crushed)

1/2 stick butter

 

Cook broccoli, drain and add soup and 1 can milk.  Stir in cheese and place in

baking dish.  Melt butter and add crushed crackers; spread on top.  Sprinkle with cheese.

 

Bake at 375 for about 15 minutes.
